Carrot Salad with Coconut & Raisins

I’m all about changing up sides when I’m preparing a meal. Making a small change to the usual sides can really wake up the taste buds and make cooking a little more adventurous. It’s sometimes hard to stray from the staples of the main course. If the main course is a fail (which sometimes happens to the best of us) it’s a lot of pressure and a lot of hungry (hangry) people left with empty plates…no bueno for sure! However, if a side-dish doesn’t go over with your hungry crowd  it’s not such a disappointment or dinner disaster…You can scrap the recipe and move on to the next adventure.

I promise, this carrot salad won’t be a side-dish disaster!

I understand cooking for 4 or more is sometimes harder than cooking for one. Lots of hungry mouths to please, making the right nutrition selections for my growing kids while keeping dinner appetizing. Oh and, I forgot, it has to be a delicious, budget-friendly, and gluten free meal everyone can enjoy. I totally got this! Most of the time. 

In the summer I’m all about quick and simple. The pre-cut matchstick carrots are fabulous! All the heavy-lifting is done for you! The less I have to use the stove or the oven the better. Everyithing about this quick carrot salad is a crowd-pleaser. My kids love carrots, and I finally got them to eat golden raisins (they aren’t a fan of the brown ones so they have been skeptical of the golden variety), I can feel good about the goodness packed in this salad, and the salty notes of the sunflower seeds and green onions makes this not just a kids salad…as my husband will attest!

Bring it to your next potluck…Just double the recipe! 

You guys, this is so quick…I put 10 minutes as needed for preparation, but it can be done in 5!!! Take your time though…No one has to know you saved a few extra minutes on the salad…I like listening to books while I cook…What’s your guilty pleasure while cooking?

This dressing whips up in NO time!!! It can also double as a dressing for traditional slaw or broccoli salad (double the recipe making it for broccoli salad or a lot of slaw). 

The result speaks for itself!!! Looks at all that crunchy, creamy, sweet, salty, nutritious, goodness packed in a quick, easy, budget friendly, gluten-free, family-pleaser of a side dish!!
